The vineyard
The estate extends over several plots, each offering a distinct and unique terroir for each grape variety cultivated.
The old vines of Cinsault, Cabernet and Ugni blanc, which are over 50 years old, grow alongside young vines such as Roll, Caladoc and Tibouren, as well as a new planting of Clairette.
These different grape varieties benefit from the specific characteristics of the clay-limestone soils and underground springs, offering a perfect expression of the terroir and fine, fruity aromas.
Le Jas des Oliviers offers white, rosé and red wines that embody both the richness of the past and the innovation of modern viticulture.
The cellar and winemaking
The state-of-the-art cellar is equipped with stainless steel and concrete vats allowing precise vinification that respects aromas.
Floating cap vats ensure optimal wine conservation.
Each step, from temperature control to on-site bottling, is supervised by Mireille Ollivier, cellar master, to guarantee the authenticity and quality of the wines.
The production of rosés is distinguished by night-time harvests, thus preserving the freshness and intensity of the aromas.
