In the heart of Fréjus, in a setting where nature meets history, Jas des Oliviers is a family wine estate that embodies the authenticity and refinement of Provence. Thanks to a unique terroir, where clay-limestone soils and deep springs mix, this estate is a true sanctuary for the vine. Generations succeed one another with passion and respect for nature, giving birth to exceptional wines that reveal all the richness and elegance of this Mediterranean landscape.

A family story

For several generations, the Ollivier family has been dedicated to growing vines and producing exceptional wines.

Each member of the family contributes to the operation, bringing their know-how and vision, from harvest to winemaking, in a spirit of transmission and respect for wine-making traditions.

It is this transmission of passion and values that makes Jas des Oliviers a unique estate, rooted in the land of Provence.

The vineyard

The estate extends over several plots, each offering a distinct and unique terroir for each grape variety cultivated.

The old vines of Cinsault, Cabernet and Ugni blanc, which are over 50 years old, grow alongside young vines such as Roll, Caladoc and Tibouren, as well as a new planting of Clairette.

These different grape varieties benefit from the specific characteristics of the clay-limestone soils and underground springs, offering a perfect expression of the terroir and fine, fruity aromas.

Le Jas des Oliviers offers white, rosé and red wines that embody both the richness of the past and the innovation of modern viticulture.

The cellar and winemaking

The state-of-the-art cellar is equipped with stainless steel and concrete vats allowing precise vinification that respects aromas.
Floating cap vats ensure optimal wine conservation.
Each step, from temperature control to on-site bottling, is supervised by Mireille Ollivier, cellar master, to guarantee the authenticity and quality of the wines.
The production of rosés is distinguished by night-time harvests, thus preserving the freshness and intensity of the aromas.

LE Jas des Oliviers labeled “Terre d'Esterel”

The Jas des Oliviers estate benefits from the “Terre d'Esterel” appellation, a label that highlights the estate's integration into this exceptional landscape. The majestic Esterel massif, with its red rocks and its panorama of the Mediterranean, offers an idyllic setting where vines thrive. This volcanic terroir, shaped by millions of years of geological history, is ideal for growing vines, producing wines with a unique character, combining power and elegance.
The story of Jas des Oliviers is a true family and wine adventure, a celebration of the terroir and respect for nature, each bottle of which tells the soul of Provence.
